Delicious recipes without preservatives

Have you already been served a little benzoic acid, calcium sorbate or potassium nitrate with your meal? Probably not. And yet, even though the market has seen a trend to natural ingredients in recent years, some food companies still use artificial preservatives to improve the shelf life of their products during processing, packaging and storage, and to make sure they look appetizing until they reach the consumer. But at what cost?

There is disagreement among researchers and regulators in the fields of food science and toxicology over the benefits and safety of many artificial food additives (including preservatives).
