Beet Carpaccio

Recipe Ingredients

  • 4 to 6 large beets, cooked and cooled
  • 60 mL (1/4 cup) croutons, coarsely crushed
  • 1 container Fountain of Health Hummus, any flavour
  • 100 g (3.5 oz) goat cheese, crumbled
  • Fresh dill or chives, finely chopped

Preparation

Slice cooked beets to a 0.5 cm (1/4 in) or so thickness and arrange on a serving dish. Spread slices with your choice of hummus. Sprinkle with goat cheese and croutons. Garnish with fresh fine herbs.
